ECD’s BakeWATCH® M.O.L.E.® and Kill Step Calculator Deliver Simple, Fast FSMA Compliance Solution

December 13, 2017 – ECD’s BakeWATCH® has introduced a streamlined, highly-effective solution for cumbersome, complex FSMA compliance data generation and reporting routines. Combining its award-winning M.O.L.E.® thermal profiler technology and a complimentary Windows-based Kill Step Calculator program, BakeWATCH has simplified and expedited the process of collecting data and producing FSMA compliance documentation.

The BakeWATCH M.O.L.E. thermal profiler is a portable, programmable tool that provides bakers and food production specialists with the ability to measure, record and document oven performance and optimize baked goods consistency for maximum quality, yield and throughput. Temperature data recorded by BakeWATCH M.O.L.E. is easily downloaded directly into the BakeWATCH Kill Step Calculator application, where each channel’s data is automatically filtered through three-way validation per the FDA-approved AIB Kill Step Protocol standards. Subsequent collection of the 30 channels of dough temperature data followed by a simple click of the “Generate Report” button produces the salmonella D-Reduction report and the FSMA compliance documentation required for audit proof.
